Enzyme solution optimizes overall efficiency of regional brewery
Case study: Read more to find out how we helped this brewery achieve more efficient liquefaction and improve sustainability
Regional brewer wanted more efficient liquefaction
For liquefaction, a regional brewer was still using a complex series of temperature holds and rises and multiple additions of malt material to the cereal cooker. This time-consuming method meant a long cereal cooking cycle, higher energy costs, less efficiency and limited brewhouse capacity.
Termamyl® SC 4X saves time, energy and water
Adding the thermostable Termamyl® SC 4X to the rice mash during cereal cooking/starch liquefaction resulted in a 63% reduction in time for cereal cooking and 43% reduction in time for the overall brewhouse mashing process (cereal cooking and malt saccharification within the mash tun).
Extract also improved by 0.5%, and the brewhouse became more efficient overall.
What’s more, the shorter brewing cycle boosted both brewing capacity and sustainability. Cereal cooking now requires less energy and less water.

Turning a ban into a boon
Challenge: The quality of raw materials changed significantly when imports of barley were banned. A regional brewer experienced that both production efficiency and quality of finished beer products were affected.
Fast and reliable acidification
Case study: A regional brewery found their process of microbial acidification for producing kettle sours was too slow.
Zero-carb beer is the market’s first
Challenge: A regional and international brewer wanted to launch an exciting new product: a zero-carb beer. Despite having evaluated various processing conditions and aids, the brewer hadn’t been able to reach the targeted RDF level.
