Optimized filtration gives improved results
Case study: Discover how a regional brewer was able to improve the efficiency of its wort and beer filtration process.
Brewer was looking to improve filtration
The “traditional” beta-glucanase a regional brewer was using was limiting the efficiency of its wort and beer filtration process. Because beta-glucans and arabinoxylans create high wort viscosity, they dramatically reduce mash filtration speed – sticking to filter aids and filter membranes.
Novonesis Ultraflo® Max boosts yield and lautering
By using Ultraflo® Max, the brewer was able to increase the amount of malt used. This allowed an increase of one Plato degree (1°P) in the process, improving yield and increasing productivity. Likewise, the brewer reduced rankings by 15%, allowing better performance in the lauter.

Existing setup yields more brewing capacity
Challenge: A regional brewer wanted to boost brewing capacity without investing in more fermenters. Could they reduce fermentation times, without compromising on beer quality?
Enzymes saves time and money in brewing
Challenge: For liquefaction, a regional brewer was still using a complex series of temperature holds and rises and multiple additions of malt material to the cereal cooker.
Zero-carb beer is the market’s first
Challenge: A regional and international brewer wanted to launch an exciting new product: a zero-carb beer. Despite having evaluated various processing conditions and aids, the brewer hadn’t been able to reach the targeted RDF level.
