Brewer wanted to optimize filtration
For years, an international brewer had used the same product for hemicellulose breakdown in its recipes, which go from 10-40% barley. But the brewer faced variable filtration performance in the brewhouse and downstream (beer filtration) as well as extract yield variability.
To control filtration performance, they tended to overdose depending on the crop quality. The brewery was capacity constrained in the brewhouse and filtration department.
Novonesis Ultraflo® improves mash and filtration
Ultraflo® Prime was dosed on the barley proportion of the recipe. This resulted in predictable filtration performance in the brewhouse and beer filtration without variability.
The solution increased total beer filtration batch size with a single filter run by 10%. The Kieselguhr body feed was also slightly reduced, enabling longer filter runs.
In addition, mash filtration improved. Using a mash filter, the sparging pressures were reduced by almost 10%, leading to more stable performance. Adjusted mash filter settings also led to better extract yields and shorter filtrations.
Using Ultraflo® Prime in recipes from 0-20% raw barley introduction can even enable undetectable beta-glucan levels.
